Unit 14. Japchae

Japchae is a sweet and savory dish of stir-fried glass noodles and vegetables that is popular in Korean cuisine. Japchae is typically prepared with dangmyeon, a type of cellophane noodles made from sweet potato starch; the noodles are topped with assorted vegetables, meat, and mushrooms, and seasoned with soy sauce and sesame oil.

100g glass noodles
150g beef
50g beech mushrooms
5 oyster mushrooms
40g carrot
150g onion
1 red chili pepper
8 stems of green onions
3 shiitake mushrooms

1. Soak glass noodles in water.
2. Put in 1 tablespoons of soy sauce, 1 teaspoon of sugar, 1 teaspoon of minced garlic, a drizzle of sesame seed oil, and a pinch of black pepper. Stir ingredients together.
3. Thinly slice beef. Add beef to marinade. Gently mix together. Add crushed sesame seeds. Marinate for several minutes.
4. Thinly slice onion and carrot. Stack carrot slices and julienne. Chop green onions into large chunks.
5, Pull apart oyster mushrooms by hand. And pull out shiitake mushrooms’s stem by hand. Slice off and remove bottom tip of stem. Thinly slice shiitake mushroom. Last, pull apart beech mushrooms by hand.
6. Slice off middle part of pepper. Thinly slice red chili pepper.
7. Add 1 tablespoon of soy sauce, 1 teaspoon of vegetable umami, 1 tablespoon of sugar, 1 teaspoon of minced garlic, 2 tablespoons of sesame seed oil, and 1 tablespoon of toasted sesame seeds. Stir well to dissolve sugar.
8. Using scissors, cut noodles in thirds. And then, drain water from bowl.
9. To pre-heated pan, add all mushrooms. After sauteing mushrooms, add cooking oil. Add onion and carrot. Add marinated meat and glass noodles to pan. Mix everything together. Add seasoning sauce to pan. After 10-20sec, add green onion and red chili pepper.
