26. BAJIRAK KALGUKSU & FRESH LETTUCE KIMCHI
Bajirak kalguksu is one of Korea’s famous noodle soups that you can enjoy the deep and savory flavor of clams with knife cut noodles.
Bajirak is a clam that is very common in Korea and it’s sometimes called short neck clam or Manila clam.
We made bajirak kalguksu today, but it can also be chicken kalguksu or seafood kalguksu depending on what you put into the soup.
For the kalguksu, we also made a common side dish called “geotjeori” which is a kind of kimchi that’s made fresh without any fermentation.
The aromas and the flavors of vegetable umami, chili powder and sesame seeds that we put into geotjeori will definitely give you an authentic experience of Korean flavors.
INGREDIENTS
» for BAJIRAK KALGUKSU
– 15 short neck clams
– 1 L water
– 30 g sea salt
– 1 serving kalguksu noodles
– 1/4 onion
– 1/2 Asian leek(or green onion)
– 1/6 young squash
– 1/2 potato
– 50 g carrot
– broth(1 L water, 2 Tbsp vegetable umami)
» for GEOTJOERI(LETTUCE KIMCHI)
– 1 romaine lettuce
– 1 Tbsp soy sauce
– 1 Tbsp vegetable umami
– 1 Tbsp toasted sesame seeds
– 1 Tbsp sesame seed oil
– 1 Tbsp red pepper flakes
– 1 Tbsp sugar
